Cabbage, Parsley and Lemony Onions salad
I love this easy, crunchy, and vibrant salad. The best part is that it's so simple to make! Chopping everything is the hardest part, while the real star of the dish is the lemony onions. Read below to learn how to make it. I enjoy it by itself as a starter before the main course, or it goes very well with lamb or any other meats.
Ingredients:
2 cups of chopped purple cabbage
2 cups of chopped parsley
1 small onion
Juice from 1/3 of a lemon
1 tablespoon of olive oil
Salt and pepper to taste
Preparation:
This salad is as easy as chopping everything up and mixing it all together, but one step that has to be done before assembling everything is marinating the onions in lemon juice. It's very easy to do and gives a nice sour taste while taking the edge off the onions.
Chop the onion into larger rounds and place them in a small bowl.
Squeeze 1/3 of a lemon over the onions. Mix the lemon juice and onions so that every piece of onion is coated, then set aside.
Chop the purple cabbage and parsley while the onions marinate.
In a large bowl, combine the chopped cabbage and parsley.
Add the marinated onions to the bowl, making sure to pour the lemon juice into the salad as well.
Drizzle with olive oil, and season with salt and pepper to taste.
Toss everything together, and your salad is ready to serve!
