Zucchini, chickpeas and spinach stew

This zucchini, chickpeas and spinach stew is so cosy and warm, it feels like a warm hug.

This is a super easy and quick recipe that is perfect by itself of you can cook some salmon and put on top for some extra protein.

Ingredients (2 people):
-1 smaller size zucchini
-3 cups of spinach
-2 cups of chickpeas (already cooked)
-1/5 cup coconut milk
-1/5 onion
-5 pieces of sun dried tomatoes
- 3 cloves of garlic
-1 tsp curry
-1/5 tsp smoked papprika
-salt/pepper
-1 tsp of olive oil

1. Pre-heat the pan, add 1 tsp of olive oil and chopped onions as well as chopped garlic. Let it cook for 2 minutes on medium heat.

2. Cut the zucchini into cubes and add to the pan. Let it all cook till it get’s translucent and a little charred.

3. Add 1 tsp curry, salt and pepper, and smoked papprika. Mix it all up and let it cook for 1 more minute.

3. Then add the spinach, coconut milk and chopped sun dried tomatoes. Lower the temperature on low and let it simmer for 7 minutes.

Divide it into bowls and enjoy!
