Porridge with seeds and berries
This silky porridge with seeds and berries recipe will turn any non porridge person into one that is looking forward to breakfast time.
This is also a very healthy recipe as it has a good amount of seeds and berries which we usually do not get enough throughout the day!
Ingredients (for 2 people / 2 bowls):
-1 cup of oats
-3 cups of water
-1 tbsp of yoghurt
-6 strawberries
-6 blackberries
-1/4 blueberries
-2 tsp of chia seeds
-2 tsp of flaxseeds
-2 tsp of sunflower seeds
-2 tbsp of pumpkin seeds
-2 tsp of sesame seeds
-2 tsp of raisins
-2 tsp of honey
Prepare:
1. Boil 3 cups of water in a sauce pan. Once it is boiling, add 1 cup of oats. Let it boil up and then decrease the heat to low. Cook it on low heat for 15 minutes while stirring the pot every 2 minutes or so to make sure it doesn’t stick to the bottom of the pot. In the meantime while the porridge is cooking wash the berries and slice the strawberries.
2. When you are at 12 minute mark, add raisins to the pot. I like when raisins cook with the porridge, because then absorbs the moisture.
3. At 13 minute mark, add 1 tbsp of yoghurt and stir the pot so the yoghurt incorporates well into the porridge. Adding a little bit of yoghurt gives luxurious silkiness to the porridge.
3. Once it hits 15minute mark and the porridge consistency is to your liking, take it off the stove and divide it to the bowls. Top it with the seeds (divide the above ingredient measures into 2 bowls), honey and top with the berries.
