Sri Lankan Chicken Curry

I love Sri Lankan food and love making it for my husband who was born there and has the most beautiful memories of country and the food.

I saw this recipe on Karan Gokani profile and had to try it. I made couple adjustments, like adding chili pepper as my husband likes spicier food and instead of curry, pandan and lemongrass leaves I used Lime leaves.

500g skinless chicken thighs, marinated in 1 tsp chilli powder and 1 tbsp ginger garlic paste

2 tbsp coconut oil
1 cinnamon stick
4 green cardamoms
3 cloves
1 chili pepper
1 red onion, sliced
1 tsp each chopped ginger and garlic
5 Lime leaves
1 tbsp Curry Powder
3 ripe tomatoes
1/2 cup thick coconut milk

1. Fry the whole spices in coconut oil for a minute.

2. Add the onions along with a pinch of salt and cook them down until browned. Then add the ginger and garlic and chopped chili pepper and continue cooking for a couple of minutes.

3. Now add the marinated chicken and cook until nicely browned.

4. Once the chicken is browned, add the curry powder, make sure it coats all pieces of meat, then tomatoes and cook them until the tomatoes broken down fully and coat the chicken evenly. Finally, finish with coconut milk and seasoning to your taste. For a few minutes until you have the consistency you like.
