Cucumber, Radish and Avocado Salad

This is a very light and perfect for the summer salad. The key is lemon! In this recipe the tanginess of lemon gives a really nice final note to this salad. I also love the crunchiness of both cucumber and radish that pairs well with smoothness of avocado.
When picking both cucumbers and radish - make sure you find hard ones. When pressing on cucumber or radish you feel a bit of lightness inside, that means it is overgrown and will not be good. You need fresh and crunchy veggies.

Ingredients:
- 3 small cucumbers
- 5 heads of radishes
- 1 small purple onion
- 1/4 cup of dill
- half of avocado
- juice from a quarter of lemon
- 1 table spoon of Olive oil
- Salt and pepper

Prepare:
Try to chop all - cucumbers, radish and avocado in similar pieces. I usually half the cucumber and chop it half rounds and then depending on what size I have radishes I either chop it in full circles or half ir and chop it in rounds. Whatever makes is the same size. Avocado should go in cubes, either the same size as a piece of cucumber or radish or smaller. After your are done with cucumbers, radishes and avocado, chop onions in small pieces, do the same with dill and put everything in one bowl. Squeeze the lemon on top, add olive oil, salt and pepper, mix it well and taste if anything needs adjustment. Et voila! Enjoy crunchy and fresh salad.
