Beets & beans salad
Beets are really a veggie that divides people to Love or Hate camps. Most Lithuanians tend to fall under Love as we have quite a few dishes with them. This easy, refreshing and easy to make salad is perfect with any meat on a side. Especially with duck!
I think the secret gun here are chopped marinated hot peppers.
Ingredients:
- 2 medium size boiled beet heads
- 1 cup of boiled beans
- 1 small purple onion
- 1/4 cup of dill
- 3 marinated hot peppers
- 1/4 cup of capers
- 1 table spoon of Olive oil
- Salt and pepper
Prepare:
The preparation is really easy, like most salads are…I recommend instead of chopping beets, to grade them, then the small pieces don’t overpower the rest of the ingredients. Graded beats give a nice bed for other ingredients.
After you are done with grading beets, chop onions, dill and marinated peppers. Add it to a bowl together with whole beans and capers. Mix it all well, add one table spoon of olive oil, some pepper and just a little bit of salt because capers give the saltiness to the salad already. Since beets are a pretty wet ingredient, air on a side of less olive oil than more (in contrast with salad where the base is kale, it is like a sponge that needs a lot of oil, otherwise it disappears). That’s it! It pairs very well with any meat dish, as the freshness of beets is a nice compliment to it.
