I keep on coming back to beans recipes and keep on developing different variations of it with it because I think you can be so creative...Beans are really like a white canvas that you can dress up however you want to. They are also a great resource of protein, folate, antioxidants and many other health benefits. In this recipe the beans are dressed (cooked) with Miso paste which is wonderful for your gut health and I added some chili peppers for some heat and the surprise (maybe not much of a surprise given it sit’s right at the top..) is the pickled purple cabbage which gives nice crunchy tanginess.

Kimchi & Pork Ribs Soup
This kimchi rib soup is incredibly warming with a delightful kick of spice. Kimchi itself offers a good level of heat, and the addition of gochujang adds an extra layer of intensity. The richness of the pork ribs complements the refreshing tang of the kimchi beautifully. If you can find them, enoki mushrooms make a wonderful addition – simply add them 10 minutes before the soup is finished cooking. If your kimchi is in large pieces, you can chop it into smaller, bite-sized portions, though I personally prefer larger pieces in this soup. And don't forget to pour in the flavorful juice from the kimchi jar!

Beets & Beans Salad
Beets are really a veggie that divides people to Love or Hate camps. Most Lithuanians tend to fall under Love as we have quite a few dishes with them. This easy, refreshing and easy to make salad is perfect with any meat on a side. Especially with duck!
I think the secret gun here are chopped marinated hot peppers.

Cucumber, Radish and Avocado Salad
This is a very light and perfect for the summer salad. The key is lemon! In this recipe the tanginess of lemon gives a really nice final note to this salad. I also love the crunchiness of both cucumber and radish that pairs well with smoothness of avocado.
