This is a very warming soup with a little kick. Kimchi has a good amount of spice and adding gochujang gives a little additional kick. I love the addition of ribs, I think the fattness of it and the freshness of Kimchi works really well. If you can find, you can add some Enoki mushrooms, add it 10 minutes before you finish cooking. If your kimchi pieces are big, you can chop them into smaller, but I like bigger pieces in this soup and don’t forget to pour the juice from the kimchi jar as well!
